It think it's fine.
There aren't very many tables in the text, and I wanted to keep the instructions easy by including a bare minimum of tags (bold and italic), so I didn't include the TABLE family of tags in the instructions. However, we're obviously going to have to mark up this formatted text somehow, so if you know how to use TABLE, I'd say go ahead. The checking form will complain, but just ignore it.
